Crunchy Coconut Granola

Throw this mix in the oven and you'll have everyone's digestive juices flowing when they smell the combination of toasted coconut, nuts, cinnamon and vanilla in the air!

This crunchy coconut granola makes the perfect breakfast with a nice dollop of yogurt or as a healthy snack to keep in house!

Ingredients

  • ½ cup almonds
  • 1 cup pepitas and sunflower seeds
  • 1 cup shredded coconut
  • 3 tbsp nut butter
  • 1 tbsp pure maple syrup
  • 2 tsp ground cinnamon
  • 1 tsp vanilla bean powder or extract
  • 2 tbsp coconut oil

Method

Mix together, spread over a baking tray, and bake in an oven at 350°F (180°C) for 15-20 minutes or until golden brown.
