Gluten-Free Baked Donuts With Caramel & Chocolate Glaze

Step away from the Krispy Kremes! In honor of National Donut Day, we have taken this holy treat and healthified a baked version!

Makes 12.

Ingredients

  • 2 cups almond meal
  • 1 cup tapioca flour
  • 1 tsp baking soda
  • 1 tsp vanilla powder (or extract)
  • 1/2 tsp ground cinnamon
  • 1/2 cup pure maple syrup
  • 1/4 cup melted coconut oil
  • 3 eggs at room temperature

Method

Preheat oven to 350ºF (180ºC) and grease a donut baking tray with coconut oil. (You can find these in most kitchen homeware stores).
Add all dry ingredients to a large bowl, mix well.
Add all wet ingredients into another bowl, mix well.
Mix together wet and dry ingredients until well combined.
Using a piping bag (this is the trick), pipe your donut mix into your donut trays.
Place in the oven and bake 15 minutes or until golden brown.
Remove from oven and allow to cool on wire rack.
Top with your favorite healthy topping below!

LUCUMA SALTED CARAMEL GLAZE

  • ½ cup coconut cream
  • ½ cup Medjool dates
  • 1/4 cup melted coconut oil
  • 3 tbsp Lucuma powder
  • ½ tsp sea salt
  • ½ tsp vanilla

Method

Blend or process until nice and smooth.

CHOCOLATE GLAZE

  • ¼ cup Food Matters Superfood Chocolate or Raw Cacao Powder
  • ¼ cup maple syrup
  • ¼ cup coconut oil

Whisk until well combined.
