Quick Raspberry Crumble

This is one of my all time favorite go-to desserts! Why? Because it is so quick to whip up whenever and usually I have these ingredients in my freezer or my pantry. There’s nothing fancy about it but the flavors are amazing!

Berries are the perfect healthy treat to satisfy your sweet tooth. They are rich in vitamins, antioxidants and fiber. They contain one of the highest concentrations of antioxidants of any fruit on earth.

Ingredients

Mixed berry

  • 1 cup mixed frozen or fresh berries
  • 1 tsp vanilla extract

Crumble

  • ½ cup macadamias, roughly chopped
  • ½ cup shredded coconut
  • 3 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon

Method

  1. Preheat the oven to 180°C / 350°F.
  2. In a small saucepan over medium heat, heat berries and vanilla until frozen berries break down.
  3. Pour berry mixture into 2 small ramekins.
  4. Prepare the crumble in a separate bowl by combining macadamias, coconut, vanilla, cinnamon, coconut oil and maple syrup.
  5. Pour the crumble filling evenly over the fruit. Bake in the oven for 20-30 minutes until the fruit juices are bubbling around the edges and the crumble is firm and browned.
