Raise your hand if you are a big fan of ice cream? It's OK, I'm raising both, you know why? Because it is one of the easiest dishes to 'healthify'. Your options for variations are endless! This one is a raspberry and coconut version, and a whole lot of YUM!
- 3 frozen bananas
- 1 cup frozen raspberries
- 1/2 cup coconut milk
Combine all ingredients in a high-speed blender or food processor.
Blend until smooth.
Run the mixture through an ice cream machine as per instructions. If you don’t have an ice cream machine, place in the freezer in a large container and freeze until firm (approx. 4 hours), removing every hour to whisk with a fork.
