Antioxidant Blueberry Smoothie

Oh, the smell of the forest from my childhood is still so fresh in my memory. Mushroom picking and berry picking were my favorite summer activities. I miss them so much!

As kids, we were waiting for school to end so the summer food extravaganza could start!  We used to go and play in the forest, full of abundance, new fruits, new smells, and animals. Both feed my soul as well as my belly! Running around playing in the forest and eating were my favorite things to do as a child.

Coming back from berry picking, the smell in my kitchen was fantastic. Making jellies, knedle, pierogi with berries (heaven on a plate), berry pies and more. There is no other fruit in the forest which has as many health benefits and such enormous healing powers as berries. Summer reminds me of my childhood, so I decided to share my favorite berry smoothie recipe.

Ingredients

  • 2 cups of coconut milk or any nut milk
  • 1 cup blueberries
  • ¾ cup  soaked walnuts
  • ½ avocado
  • 1 tbsp maca powder
  • 1 tsp acai powder
  • 2 dates - optional
  • ½ teaspoon vanilla

Method

  1. Soak walnuts overnight.  Add all the ingredients to a high-speed blender and blend until smooth.
