Banoffee Breakfast Bowl
This banoffee breakfast bowl is a quick and delicious breakfast, sure to give you an energy kick to start your day!
- 1/2 cup pitted dried dates, chopped
- 1 cup nut milk
- 1 cup rolled oats
- 1/3 cup Greek-style yogurt or coconut yogurt
- 2 tsp honey
- 1 small banana, sliced
- 1 tbsp crushed peanuts
- Place the dates, milk and 1/2 cup water in a saucepan over low heat for 5 minutes or until the dates are softened. Allow to cool slightly, then place in a food processor with the oats and process on high to form a smooth purée.
- Divide the purée between two bowls. Top with the yogurt, honey, banana and peanuts, and serve.
