Raw Peppermint Patties

Raise your hand if you love Peppermint Patties! Now, raise your hand if you’ve ever read the ingredient list of these delicious Peppermint Patties?!

We hate to be the bearer of bad news, but there aren't many nice things in those little babies. Not to stress, we’ve recreated a Food Matters approved version that is just as tasty!

Ingredients

Peppermint filling:

  • 1/3 cup shredded coconut
  • 1/3 cup cashews, soaked for 4-6 hours or overnight
  • 2 tbsp melted coconut oil
  • 3 tbsp 100% pure maple syrup
  • 1-2 drops of food grade peppermint oil
  • Pinch of sea salt

Chocolate Layer

  • 2 tbsp melted coconut oil
  • 1/3 cup raw cacao powder or Food Matters Superfood Chocolate
  • 4 tbsp 100% pure maple syrup
  • Pinch of sea salt
  • 1 tsp ground cinnamon

Method

  1. Blend all ingredients for the mint pattie together until smooth.
  2. Pat into flattened balls (patties) with your hands and place them in the freezer to set for around 30 minutes.
  3. Process all ingredients from the chocolate layer together until smooth.
  4. Dip each pattie in the chocolate sauce and watch them harden almost immediately!
