Boost your intake of greens with this super simple smoothie recipe. A definite go-to for the whole Food Matters Team!

WHAT YOU NEED

  • Handful baby spinach leaves
  • 1/2 avocado
  • 1 cup (8 fl. oz) coconut milk
  • 1 tsp greens
  • Optional: 2 tbsp plant-based clean protein powder

What to do

  1. Blend all ingredients.

The dark green color of spinach leaves indicates they contain high levels of chlorophyll and health promoting carotenoids (beta carotene, lutein and zeaxanthin). These phytochemicals have anti-inflammatory and anti-cancerous properties and are especially important for healthy eyesight, helping to prevent macular degeneration and cataracts.

Fresh 100 g of spinach contains about 25% of daily intake of iron; one of the richest among green leafy vegetables. Iron is an important trace element required by the human body for red blood cell production and as a cofactor for oxidation-reduction enzyme, cytochrome-oxidase during the cellular metabolism.
