I loved experimenting with the local produce from the markets in Vanuatu. This recipe may be a simple one, but the flavors pack a punch!

Pineapples provide a host of vitamins and minerals, including vitamins A and C, calcium, potassium, magnesium, and manganese. They also contain bromelain, which helps regulate the pancreatic secretions that aid in digestion.

Ingredients

  • 1/2 pineapple, peeled, cored, and diced
  • 1 Lebanese or Persian cucumber, peeled (if non-organic) and diced
  • 1/4 cup mint leaves, finely chopped
  • 1 pinch unrefined sea salt
  • 1/4 teaspoon chili powder
  • Juice of 1 lime

Method

1. Mix the pineapple, cucumber, mint, salt, and chili powder in a bowl and serve with a squeeze of fresh lime juice on top.
